Dominated by Chardonnay, Brut Régence has a great aromatic fineness and embodies Brimoncourt’s spirit and signature. It is a gallant wine all the more seducing with its freshness, round texture and delicately fruity finish.

An elegant, clear and golden robe it up with a generous string of fine and dancing bubbles. The subtle delicate nose of white flowers (acacia) gives beautiful freshness and great fineness. The open and flexible attack on the palate blooms with slighty toasted aromas of white peach. The first freshness in the mouth is tempered by the fruit of Pinot Noir structuring the wine. A perfectly balance champagne, without heaviness nor excessive sweetness. Soft notes lit up with fine and silky bubbles.

Brut RégenceTaramasalata Mille-feuille

  1. Turn on the oven to 180°C (gas mark 6).
  2. Brush each filo sheet with melted butter. Lay them on top of each other, cut them into large strips, then cut each strip into squares.
  3. Place the squares of dough on a baking sheet covered with parchment paper, sprinkle with sesame seeds and bake for about 6 minutes.
  4. Mix the tarama with cream cheese to reach a light texture.
  5. Separate all the squares of dough, stack them 2 by 2, adding 1 teaspoon of tarama between each layer until all the ingredients are used up.
